In Travel guides central, Cao Lau is unique dish attached to the ancient town of Hoi An. Cao Lau looks like noodle but it is not. Many people believe that this food comes from China, but the Chinese here are not recognized it. Japanese also argue that it resembles their udon noodles but with different flavors and ways of processing.

People often eat Cao Lau with boiled bean sprouts, but not too soft and a few of vegetables, taken from the famous traditional Tra Que vegetable village in Hoi An. The boiled bean sprouts is spilled into a bowl, put noodle on top, added a few slices of pork meat and fat poured cloves (fried pork skin) and a tablespoon of hot oil.
